Prepare Sushi Rice

Rinse the Rice
In a fine-mesh strainer, rinse the sushi rice under cold water until the water runs clear. This removes excess starch and helps the rice to be less sticky.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and water is absorbed.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture with a spatula. Allow the rice to cool to room temperature.

Slice the Salmon
Using a sharp knife, slice the fresh salmon fillet into thin strips, about 1/4 inch thick.

Prepare the Nori
Lay a bamboo sushi mat on a flat surface. Place a sheet of nori, shiny side down, on the mat.

Add Sushi Rice
With wet hands, take about 1 cup of sushi rice and evenly spread it over the nori, leaving about 1 inch of space at the top.

Roll the Sushi
Using the bamboo mat, start rolling the sushi away from you, gently but firmly. Roll until the rice-covered nori is fully rolled over the fillings.

Slice the Roll
Using a sharp knife, wet the blade and slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices.
