Prepare the Ice Cream

    Scoop Ice Cream

    Scoop the ice cream into small balls using a cookie scoop or spoon, about 1 tablespoon each. Place the scoops on a baking sheet lined with parchment paper. Freeze the scoops for at least 1-2 hours or until firm.

Make the Mochi Dough

    Mix Ingredients

    In a microwave-safe bowl, combine the sweet rice flour and sugar. Gradually add the water while stirring until smooth.

    Cook the Mochi

    Cover the bowl with plastic wrap and microwave on high for 1 minute. Remove and stir. Cover again and microwave for another minute. Repeat one more time for a total of 3 minutes, stirring after each minute. The mochi should be sticky and slightly translucent.

    Dust and Cool

    Dust a clean surface with cornstarch. Transfer the mochi dough onto the surface and dust the top with more cornstarch. Let it cool for a few minutes until it's manageable.

Assemble the Mochi Ice Cream

    Wrap Ice Cream

    Take a small piece of mochi dough (about the size of your palm) and flatten it out with your hands or a rolling pin. Place a frozen ice cream ball in the center and fold the edges over to seal. Pinch the edges to ensure it’s completely wrapped.

    Chill the Mochi Ice Cream

    Place the wrapped mochi ice cream back on the parchment-lined baking sheet. Repeat the process for the remaining ice cream balls. Freeze the mochi ice cream for at least 30 minutes before serving.
