Preparing the Mochi Dough

    Mixing Ingredients

    In a large mixing bowl, combine 1 cup of glutinous rice flour, 1 cup of water, and 2 tablespoons of sugar. Mix until there are no lumps.

    Cooking the Dough

    Transfer the mixture to a microwave-safe bowl. Cover it with plastic wrap, leaving a small vent for steam to escape. Microwave on high for 1 minute, stir, then microwave for an additional 1 minute. Repeat this process until the dough is slightly translucent and sticky (about 3-4 minutes total).

    Cooling the Dough

    Once cooked, let the mochi dough cool for a few minutes until it is safe to handle.

Forming the Mochi

    Dusting

    On a clean surface, sprinkle 2 tablespoons of cornstarch to prevent sticking. Place the cooked mochi dough on the surface and dust the top with more cornstarch.

    Cutting the Dough

    Using a rolling pin, roll out the dough to about 1/4 inch thick. Cut out circles using a cookie cutter or a glass (about 3 inches in diameter).

    Adding Ice Cream

    Take a circle of mochi, place a small scoop (about 1 tablespoon) of ice cream in the center, and fold the edges over the ice cream to seal it. Pinch the edges to make sure it is tightly closed.

    Place the filled mochi on a parchment-lined tray and freeze for at least 1 hour to firm up.
