Prepare the Apples
Wash and core the apples, then cut them into quarters. You can leave the skins on for additional flavor.
Cook the Apples
In a large pot, combine the quartered apples and water. Bring to a boil over medium-high heat, then reduce the heat and let it simmer for about 30 minutes, or until the apples are soft.
Mash the Apples
Using a potato masher or a wooden spoon, mash the apples in the pot to release their juices.
Strain the Mixture
Place a fine mesh strainer or cheesecloth over a large bowl. Pour the apple mixture into the strainer and let it drain to separate the liquid from the solids. Press down on the solids to extract as much juice as possible.
Simmer the Cider
Return the spiced apple juice to the pot and simmer over low heat for an additional 20-30 minutes, allowing the flavors to meld together.
Serve
