Crust Preparation

Make the Crust

Preheat the oven to 350°F (175°C). In a bowl, combine almond flour, melted butter, granulated sugar, and salt. Press the mixture firmly into the bottom of a greased 9-inch square baking dish. Bake for 10-12 minutes until lightly golden.

Cheesecake Filling Preparation

Prepare the Filling

In a mixing bowl, beat the softened cream cheese with granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, lemon juice, and lemon zest. Pour the filling over the baked crust.

Bake the Cheesecake

Bake the cheesecake in the preheated oven for 25-30 minutes, or until the center is set. Remove from the oven and let cool completely, then refrigerate for at least 2 hours.

Lemon Sorbet Preparation

Make the Sorbet

In a saucepan, combine water and sugar over medium heat. Stir until the sugar dissolves. Remove from heat, add lemon juice, and chill the mixture in the refrigerator. Once chilled, churn in an ice cream maker according to manufacturer's instructions.

Cut the chilled cheesecake into squares and serve with a scoop of lemon sorbet on the side.
