Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick. Rinse the cut potatoes under cold water to remove excess starch, then pat them dry with a clean kitchen towel.

Soak the Potatoes

Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps to make the fries crispier.

Heat the Oil

In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a deep-fry thermometer to check the temperature.

Fry the Potatoes

Carefully add a batch of the soaked and dried potatoes to the hot oil, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy. Use a slotted spoon to remove the fries and place them on a paper towel-lined plate to drain excess oil.
