Scallion Schmear Preparation

Mix the Cream Cheese
In a medium bowl, add the cream cheese. Soften it slightly by leaving it at room temperature for about 15 minutes if it's too hard to mix.

Chop the Scallions
Finely chop the scallions, using both the white and green parts. Add them to the cream cheese.

Add Lemon Juice and Seasoning
Stir in the lemon juice, salt, and black pepper. Mix until well combined. Taste and adjust seasoning if necessary.

Toast the Bagels
Slice the bagels in half and toast them until golden brown.

Prepare the Tomato and Onion
While the bagels are toasting, wash the tomato and sprouts. Slice the tomato into thin rounds and slice the red onion into thin rings.

Spread the Schmear
Once the bagels are toasted, spread a generous amount of the scallion schmear on each half.

On one half of each bagel, layer the smoked salmon, then add the tomato slices, onion rings, and fresh sprouts.

Top with the other half of the bagel to complete the sandwich. Serve with a side of potato chips.
