Pimento Cheese Preparation

Mix the Cheese
In a large mixing bowl, combine the cream cheese, shredded cheddar cheese, pimentos, mayonnaise, garlic powder, onion powder, salt, and black pepper. Mix until all ingredients are well incorporated and smooth.

Fry the Saltines
In a deep pan, heat the oil over medium heat. Once hot, carefully add saltine crackers in batches and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
Lemon Butter Sauce

Prepare the Lemon Butter Sauce
In a saucepan over low heat, melt the butter. Add the lemon juice, garlic confit, capers, and white wine. Simmer gently for about 5 minutes, allowing the flavors to meld. Remove from heat.
Assembly

Serve the Dish
On a serving platter, place the pimento cheese mixture in the center. Arrange the crispy bacon, grilled vegetables, and fried saltines around it. Drizzle the lemon butter sauce over the top and serve with slices of sourdough bread for dipping.
