Dough Preparation

    Activate the Yeast

    In a small bowl, combine warm water (not hotter than 110°F), sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    Mix the Dry Ingredients

    In a large mixing bowl, combine the flour and salt. Whisk together until well blended.

    Combine the Ingredients

    Make a well in the center of the dry ingredients, and pour in the yeast mixture and olive oil. Stir with a wooden spoon until a shaggy dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Incorporate the fresh rosemary leaves during kneading.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.

Shaping and Baking

    Prepare the Baking Pan

    Grease a large baking pan (about 13x18 inches) with olive oil.

    Shape the Dough

    Once the dough has risen, punch it down and transfer it to the prepared baking pan. Stretch and press the dough to fit the pan evenly.

    Cover the dough with a damp cloth and let it rise for another 30-45 minutes.

    Preheat your oven to 425°F (220°C) during the second rise.

    Dimple and Add Toppings

    After the second rise, use your fingertips to make dimples all over the surface of the dough. Drizzle with olive oil and sprinkle with additional salt and rosemary if desired.

    Bake the focaccia in the preheated oven for 20-25 minutes, or until golden brown.

    Remove from the oven and let it cool on a wire rack for about 10 minutes before slicing.

    In a small saucepan, combine the garlic cloves (peeled) and olive oil. Cook over low heat for about 30-40 minutes until the garlic is soft and fragrant.

    In a mixing bowl, combine the softened unsalted butter, roasted garlic (mashing it into a paste), salt, and parsley (if using). Blend until smooth and creamy.
