Method

Preparation

  1. 1

    Combine Base Ingredients

In a large mixing bowl, combine the carbonated water, brown sugar, vanilla extract, molasses, and root beer extract. Stir gently until the brown sugar is fully dissolved.

  2. 2

    Activate the Yeast

In a small bowl, dissolve the yeast in a small amount of warm water (around 100°F/37°C). Let it sit for about 5 minutes until it becomes foamy.

  3. 3

    Mix Yeast with Base

Once the yeast is activated, add it to the mixture in the large bowl and stir gently to combine.

Fermentation

  1. 4

    Bottle the Mixture

Pour the root beer mixture into clean bottles, leaving about an inch of space at the top. Seal the bottles tightly.

  2. 5

    Ferment

Leave the bottles at room temperature for 3 to 5 days. Check the pressure by gently squeezing the bottles; they should feel firm but not overly hard.

Serving

  1. 6

    Chill and Serve

Once the root beer is fermented to your liking, refrigerate the bottles to stop the fermentation process. Serve chilled over ice, garnished with lime slices and mint leaves if desired.
