    Prepare the Potatoes

    Wash and scrub the russet potatoes thoroughly. Slice them into thin rounds using a mandolin or a sharp knife.

    Soak the Potato Slices

    Place the sliced potatoes in a bowl of cold water and let them soak for about 30 minutes. This helps to remove excess starch and makes the chips crispier.

    Preheat the Oven

    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Season the Potato Slices

    Drain and pat dry the potato slices. In a large bowl, toss them with olive oil, nutritional yeast, garlic powder, onion powder, paprika, and salt.

    Bake the Chips

    Spread the seasoned potato slices in a single layer on the prepared baking sheet. Bake in the preheated oven for about 20-25 minutes or until golden and crispy, flipping halfway through.

    Once baked, remove the chips from the oven and let them cool slightly before serving.

Charred Scallion Dip

    Char the Scallions

    Heat a skillet over medium-high heat. Add the scallions and char them for about 2-3 minutes, turning occasionally, until they have dark grill marks and are slightly wilted. Remove from heat and let cool.

    Prepare the Dip Base

    In a mixing bowl, combine the sour cream, mayonnaise, and lemon juice. Mix well until smooth.

    Chop the Scallions

    Once the charred scallions are cool, chop them finely and add them to the dip mixture.

    Add salt and black pepper to taste. Stir everything together until well combined.
