Method

Grilling the Shrimp

  1. 1

    Prepare the Marinade

In a large bowl, combine the olive oil, lemon juice, lime juice, minced garlic, salt, and black pepper. Mix well.

  2. 2

    Marinate the Shrimp

Add the shrimp to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.

  3. 3

    Grill the Shrimp

Preheat the grill to medium-high heat. Remove shrimp from the marinade and thread them onto skewers. Grill for 2-3 minutes per side, or until they are opaque and cooked through. Remove from the grill and set aside.

Preparing the Salad

  1. 4

    Assemble the Greens

In a large salad bowl, add the spring mix greens as the base.

  2. 5

    Add the Vegetables and Fruits

Top the greens with halved grape tomatoes, sliced strawberries, dried cherries, and toasted almonds.

Making the Vinaigrette

  1. 6

    Combine Vinaigrette Ingredients

In a small bowl, whisk together the strawberry champagne vinegar, olive oil, honey, salt, and black pepper until well blended.

Final Assembly

  1. 7

    Combine Salad and Shrimp

Once the shrimp are grilled, place them on top of the salad mixture.

  2. 8

    Dress the Salad

Drizzle the strawberry champagne vinaigrette over the salad and toss gently to combine. Serve immediately.
