    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a large bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    After soaking, drain and pat the potatoes dry using paper towels to ensure they are as dry as possible.

    Heat the Oil

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Fry the Potatoes

    Carefully add the dried potato strips in batches to the hot oil. Fry until they are golden brown and crispy, about 4-6 minutes.

    Drain and Season

    Remove the fries from the oil and drain on paper towels. While still hot, sprinkle with sea salt to taste.

Garlic Aioli

    Mix the Ingredients

    In a medium bowl, combine the mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and black pepper.

    Whisk Together

    Whisk the mixture until all ingredients are fully incorporated and the aioli is smooth.

    Taste and Adjust

    Taste the aioli and adjust seasoning with additional salt or lemon juice, if desired.

    Chill

    Cover the garlic aioli and refrigerate for at least 30 minutes to allow the flavors to meld.
