Charred Broccolini

Prepare the Broccolini
Rinse the broccolini under cold water and trim the ends. Pat dry.

Season and Char
In a large skillet, heat the olive oil over medium-high heat. Add the broccolini, season with salt and black pepper, and sauté for 5-7 minutes, turning occasionally, until charred and tender.

Make the Pickling Liquid
In a saucepan, combine apple cider vinegar, water, sugar, and salt. Bring to a boil, stirring until sugar and salt are dissolved.

Melt Preparation

Toast the Bread
In a skillet, melt 1 tablespoon of butter over medium heat. Toast the Cuban bread slices on both sides until golden brown.

Assemble the Melt
On one slice of toasted Cuban bread, layer the charred broccolini, pickled onions, grape tomatoes, and gruyère cheese. Top with the other slice of bread.
