Rinse the Castelvetrano olives under cold water to remove any excess brine. Drain well and set aside.

In a medium bowl, combine the rinsed olives, citrus zest, chili flakes, fennel pollen, and olive oil. Mix well to ensure the olives are evenly coated with the flavorings.
