Method

Preparing the Calamari

    Clean the Calamari

    Rinse the calamari under cold water and remove any innards, if necessary. Cut the squid into rings about 1-inch thick.

    Soak in Buttermilk

    Place the calamari rings in a bowl and cover with buttermilk. Let them soak for at least 30 minutes in the refrigerator.

Making the Marinara Sauce

    Heat Olive Oil

    In a medium saucepan, heat the olive oil over medium heat.

    Sauté Garlic

    Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Add Tomatoes and Seasonings

    Stir in the crushed tomatoes, oregano, salt, and sugar. Bring the sauce to a simmer and let it cook for 15-20 minutes, stirring occasionally.

    Finish with Basil

    Remove from heat and stir in the chopped fresh basil. Set aside.

Frying the Calamari

    Prepare the Breading

    In a shallow dish, combine the flour, cornstarch, salt, black pepper, garlic powder, and paprika.

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Bread the Calamari

    Remove the calamari from the buttermilk and shake off excess. Dredge the rings in the flour mixture until fully coated.

    Fry the Calamari

    Carefully place the breaded calamari rings into the hot oil in batches, making sure not to overcrowd the pan. Fry for 2-3 minutes until golden brown and crispy.

    Drain and Serve

    Remove the fried calamari with a slotted spoon and drain on paper towels. Serve hot with marinara sauce for dipping.
