    Peel and dice the Idaho potatoes into small cubes. Rinse under cold water and pat dry with a kitchen towel.

    In a large skillet, heat olive oil over medium heat. Add the diced potatoes and cook for about 10 minutes until they begin to soften.

    Add Garlic and Peppers

    Stir in the confit garlic, bell peppers, onion, salt, and black pepper. Continue cooking for another 10-15 minutes, stirring occasionally, until the potatoes are crispy and golden brown.

    In a separate pan, fry the eggs sunny-side up or to your preference.

    Assemble the Dish

    Serve the hash on plates topped with a fried egg, a drizzle of garlic aioli, and slices of Jamon Serrano if using.
