Prepare the Bones
Preheat your oven to 400°F (200°C). Place the beef bones on a baking sheet and roast for 30-45 minutes until browned. This step enhances the flavor of the broth.

Combine Ingredients
In a large stockpot, add the roasted bones, water, chopped carrots, chopped celery, quartered onion, crushed garlic cloves, apple cider vinegar, bay leaves, and black peppercorns.

Simmer the Broth
Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low and let it simmer for at least 12 hours. The longer you simmer, the richer the flavor. You can do this on the stovetop or in a slow cooker.

Strain the Broth
After simmering, remove from heat and let it cool slightly. Strain the broth through a fine mesh sieve or cheesecloth into a large bowl or another pot. Discard the solids.

Season and Store
Season the broth with salt to taste. If using immediately, serve hot. Otherwise, let it cool completely before storing in the refrigerator or freezer.

When serving, you can garnish with fresh parsley for added flavor and freshness.
