Beef Preparation

Roast the Beef

Preheat the oven to 300°F (150°C). Rub the beef roast with salt, black pepper, garlic, and coffee grounds. Place it in a roasting pan and cook for about 3 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.

Make the Broth

Once the beef is cooked, remove it from the oven and let it rest. In the same roasting pan, add bone broth and scrape up any browned bits. Heat on the stove until simmering.

Shallots and Assembly

Caramelize the Shallots

In a skillet over medium heat, add a bit of oil and the sliced shallots. Cook until they are soft and caramelized, about 10-15 minutes.

Assemble the Sandwich

Slice the rested beef thinly. On each baguette slice, spread garlic aioli, layer with beef, caramelized shallots, havarti cheese, and arugula. Top with another baguette slice.

Serve

Serve the sandwiches with a side of the warm fortified bone broth for dipping.
