    Prepare the Bison Patty

    In a mixing bowl, combine the ground bison with salt and black pepper. Form the mixture into two equal patties, about 1/2 inch thick.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the bison patties for about 4-5 minutes on each side or until they reach an internal temperature of 160°F (71°C).

    Toast the Buns

    While the patties are cooking, lightly toast the brewer's buns on the grill or in a toaster until golden brown.

    Assemble the Burger

    Spread a tablespoon of garlic aioli on the bottom half of each toasted bun. Place a cooked bison patty on each bun, then top with arugula and pickled red onion. Finally, add the top half of the bun.

    Serve

    Serve the bison burgers immediately with your choice of sides.
