Mix the Dough
In a large mixing bowl, combine the wholegrain sourdough starter and warm water. Mix until smooth.

Add Dry Ingredients
Gradually add the whole wheat flour and salt to the mixture. Stir until a sticky dough forms.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 5-10 minutes until the dough is smooth and elastic.

First Rise
Place the kneaded dough into a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for 2-3 hours, or until doubled in size.

Prepare for Baking
Grease a baking sheet with olive oil. Once the dough has risen, gently punch it down and transfer it to the greased baking sheet.

Shape the Dough
Stretch the dough to fit the baking sheet, creating dimples with your fingers all over the surface.

Second Rise
Cover the dough again and let it rise for another 30-45 minutes.

Preheat Oven
Preheat your oven to 425°F (220°C).

Add Toppings
Drizzle with olive oil, sprinkle the fresh rosemary and coarse sea salt on top.

Bake in the preheated oven for 20-25 minutes, or until golden brown.

Remove from the oven and let it cool slightly before slicing and serving.
