Cooking Quinoa

    Rinse and Cook Quinoa

    Rinse 1 cup of quinoa under cold water to remove bitterness. In a medium saucepan, bring 2 cups of vegetable broth to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.

Preparing Vegetables

    Sauté Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 3 minced garlic cloves and sauté for about 1 minute until fragrant. Add the chopped bell pepper, diced carrot, and sliced zucchini. Sauté for about 5-7 minutes until the vegetables are tender.

    Add Spinach

    Once the other vegetables are tender, add 2 cups of fresh spinach to the skillet. Cook for an additional 2-3 minutes until the spinach is wilted.

Combining Ingredients

    Combine Everything

    In the skillet with the sautéed vegetables, add 1 cup of cooked chickpeas and 1 cup of cubed tofu. Sprinkle in 1 teaspoon of cumin, 1 teaspoon of paprika, 0.5 teaspoon of salt, and 0.5 teaspoon of black pepper. Stir well to combine and cook for another 5 minutes to heat through.

    Finish with Lemon Juice

    Remove the skillet from heat and drizzle 2 tablespoons of lemon juice over the mixture. Stir to combine.
