Preparation of Quinoa

    Rinse Quinoa

    Rinse 1 cup of quinoa under cold running water to remove its natural coating, called saponin, which can make it taste bitter.

    Cook Quinoa

    In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

Preparation of Vegetables

    Chop Vegetables

    While the quinoa is cooking, chop the bell pepper and zucchini into small, bite-sized pieces.

    Sauté Vegetables

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped bell pepper and zucchini, and sauté for about 5-7 minutes until they are tender. Add the spinach and cook for an additional 2-3 minutes until wilted.

    Prepare Avocado

    While the vegetables are cooking, slice the avocado in half, remove the pit, and scoop the flesh into slices.

    Combine Ingredients

    In a large bowl, combine the cooked quinoa, sautéed vegetables, and black beans. Drizzle with lemon juice, and add salt and black pepper to taste. Gently mix until everything is well combined.

    Serve

    Divide the quinoa and vegetable mixture into serving bowls and top with sliced avocado. Enjoy your Vegan Bowl!
