Marinate Chicken

In a large bowl, combine buttermilk, salt, black pepper, and paprika. Mix well.

Add the chicken breasts to the buttermilk mixture, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best results.

In a separate bowl, whisk together flour, cornstarch, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper.

In a large skillet or deep fryer, heat oil to 350°F (175°C).

Remove chicken from marinade, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating.

Carefully place chicken in the hot oil and fry for about 6-8 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove and drain on paper towels.

In a large bowl, mix together shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, honey, salt, and black pepper. Toss until well combined. Refrigerate for at least 30 minutes.

In a small bowl, combine mayonnaise, sriracha sauce, lemon juice, and salt to taste. Mix until smooth and set aside.
Assemble Sandwich

Assemble the Sandwich
Spread a generous amount of spicy mayo on the bottom bun, add a piece of fried chicken, top with slaw, and add pickles if desired. Place the top bun over the sandwich and serve immediately.
