Calamari Preparation

Clean the calamari by removing the head, innards, and skin. Rinse under cold water and slice into rings.

In a bowl, combine the flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper.

In another bowl, pour the buttermilk. Dip the calamari rings into the buttermilk, then dredge in the flour mixture until fully coated.

Heat the vegetable oil in a deep frying pan over medium-high heat until it reaches 375°F (190°C).

Fry the calamari in batches for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add the crushed tomatoes, oregano, basil, salt, black pepper, and sugar. Stir to combine.

Simmer the sauce on low heat for about 15-20 minutes, stirring occasionally until it thickens slightly.

Taste and adjust seasoning if necessary. Remove from heat and set aside.
