    Boil the Eggs

    Place the eggs in a pot and cover them with cold water. Bring to a boil over medium-high heat.

    Cook the Eggs

    Once boiling, cover the pot and remove it from heat. Let the eggs sit in the hot water for 12 minutes.

    Cool the Eggs

    After 12 minutes, transfer the eggs to an ice bath for 5-10 minutes to cool completely.

Filling Preparation

    Peel the Eggs

    Once cool, gently crack the eggshells and peel under running water to remove any stubborn bits.

    Slice the Eggs

    Slice each egg in half lengthwise and carefully remove the yolks, placing them in a mixing bowl.

    Mix the Filling

    Add mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper to the yolks. Mash and mix until smooth.

Assembly

    Fill the Egg Whites

    Using a spoon or piping bag, fill each egg white half with the yolk mixture.

    Garnish

    Sprinkle smoked paprika over each filled egg and garnish with chopped chives or parsley if desired.
