Preparation Steps
Cook the Chicken
Season the chicken breasts with Cajun seasoning. Grill or pan-fry the chicken over medium heat until fully cooked, about 6-7 minutes per side. Let it rest for a few minutes, then shred or slice the chicken.
Prepare the Filling
In a large bowl, combine the shredded chicken, roasted corn, chopped green onions, mozzarella, and cheddar cheese. Mix well.
Assemble Quesadillas
Place a flour tortilla on a flat surface. Spoon a generous amount of the chicken and cheese mixture onto one half of the tortilla. Fold the other half over to cover the filling.
Cook the Quesadillas
Heat a non-stick skillet over medium heat. Place the folded quesadilla in the skillet and cook for 3-4 minutes on each side until golden brown and the cheese is melted. Repeat for the remaining tortillas.
Serve
Cut the quesadillas into wedges and serve warm with jalapeno ranch and pico de gallo on the side.
