Mini Yorkies Preparation

Prepare the Braised Beef

In a large pot, heat olive oil over medium heat. Season the beef chuck roast with salt and pepper. Sear the beef on all sides until browned, about 5-7 minutes. Remove the beef and set aside.

Sauté Aromatics

In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

Braise the Beef

Return the beef to the pot, add the beef broth, and bring to a simmer. Cover and reduce heat to low. Cook for 2-3 hours, or until the beef is tender and easily shreds.

Make the Yorkshire Pudding

Preheat the oven to 400°F (200°C). In a mixing bowl, whisk together flour, eggs, milk, and salt until smooth. Let it rest for 10 minutes.

Bake the Mini Yorkies

Place a mini muffin tin in the oven to heat for 5 minutes. Remove the tin, and pour the batter evenly into each cup. Bake for 15-20 minutes, or until puffed and golden brown.

Prepare the Parmesan Mashed Potatoes

Peel and chop the potatoes, then boil in salted water until tender. Drain and mash with parmesan cheese, sour cream, salt, and pepper to taste.

Assemble the Mini Yorkies

Once the beef is cooked, shred it into pieces and mix with a little beef au jus. Place a spoonful of mashed potatoes on each mini yorkie, followed by the shredded beef and a drizzle of horseradish crema.
