Preparation and Cooking

    Prepare the Potatoes

    Wash and peel the Kennebec potatoes. Cut them into even-sized fries, approximately 1/4-inch thick.

    Soak the Fries

    Place the cut fries in a large bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Dry the Fries

    After soaking, drain the fries and pat them dry with paper towels to remove moisture.

    Heat the Oil

    In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add a batch of fries to the hot oil, frying for about 4-5 minutes until golden brown. Avoid overcrowding the pot.

    Drain and Season

    Remove fries from the oil and drain on paper towels. While they are still hot, sprinkle with salt, black pepper, garlic powder, and paprika to taste.

    Serve

    Serve the fries hot as a side dish.
