    Prepare the Potatoes

    Begin by peeling and boiling the potatoes until fork-tender. Drain and smash them lightly with a fork. Season with salt and pepper, and drizzle with olive oil.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove and set aside, leaving some drippings in the pan.

    Cook the Prawns

    In the same skillet, add the prawns and sprinkle with Louisiana spice mix. Cook for about 3-4 minutes until they turn pink and opaque. Remove from heat.

    Poach the Eggs

    In a saucepan, bring water to a gentle simmer. Crack the eggs into individual bowls and gently slide them into the water. Poach for about 3-4 minutes for runny yolks, then remove with a slotted spoon.

    Assemble the Bowl

    In a bowl, layer the smashed potatoes, then top with the cooked prawns, cherry tomatoes (halved), avocado (sliced), and crispy bacon. Place the poached eggs on top and drizzle with hollandaise sauce.

    While assembling, toast the sourdough bread slices until golden brown.
