    Prepare the Fries

    Peel and cut the Kennebec potatoes into fries, soaking them in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain potatoes and pat them dry. Fry in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, seasoning with salt immediately.

    Prepare the Gravy

    While the fries are cooking, heat the beef or chicken gravy in a saucepan until hot, stirring occasionally.

    Assemble the Poutine

    Place a layer of hot fries on a plate, sprinkle cheese curds over the fries, and then generously drizzle hot gravy over the top. Serve immediately.
