In a small bowl, mix warm water, yeast, and honey or maple syrup. Let it sit for about 5-10 minutes until frothy.

Activate Yeast

In a large bowl, combine whole wheat flour, rolled oats, flaxseeds, chia seeds, and salt.

Mix Dry Ingredients

Once the yeast mixture is frothy, add it to the dry ingredients along with olive oil. Stir until combined.

Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 1 hour or until doubled in size.

After the first rise, punch down the dough and shape it into a loaf. Place it in a greased loaf pan.

Cover the loaf and let it rise for another 30-45 minutes until it rises above the rim of the pan.

Bake the loaf in the preheated oven for 30-35 minutes, or until golden brown and sounds hollow when tapped on the bottom.

Remove the bread from the oven, let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
