Cider Preparation

Prepare the Apples
Wash the apples thoroughly. Remove any bruised or rotten spots, and then chop them into quarters without peeling.

Juicing the Apples
Using a cider press or a juicer, extract the juice from the chopped apples into a clean container.

Add Yeast
Sprinkle the yeast over the surface of the juice mixture. If using Campden tablets, crush them and add them to the mix at this point. Allow the mixture to sit for 24 hours before proceeding with fermentation.

Fermentation
Seal the fermentation vessel with an airlock and place it in a cool, dark area. Allow the cider to ferment for about 2 to 4 weeks, checking periodically for bubbling in the airlock.

Aging
Store the bottles in a cool, dark place to age for at least 2 months before tasting. The longer you age, the smoother the cider will become.
