Cook the Penne Pasta
In a large pot of boiling salted water, cook the gluten-free penne pasta according to package instructions until al dente. Drain and set aside.

Prepare the Bolognese Sauce
In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent.

Add Meat
Add the ground beef (or turkey) to the skillet. Cook until browned and cooked through, breaking it apart with a spatula.

Stir in Tomatoes and Seasoning
Add the fire-roasted diced tomatoes and Italian seasoning. Stir well, bringing the mixture to a simmer. Let it cook for about 10 minutes.

Incorporate Cream and Spinach
Reduce the heat, then stir in the heavy cream and fresh spinach. Cook until the spinach is wilted and the sauce is heated through.

Combine with Pasta
Toss the cooked penne pasta into the sauce, mixing well to coat the pasta evenly. Season with salt and black pepper to taste.

Serve the penne Bolognese hot, topped with grated Parmesan cheese.
