    Prepare the Fries

    Peel and cut the potatoes into thick fries. Rinse them in cold water and pat them dry.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 180°C (350°F). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

    Make the Batter

    In a bowl, mix the flour, cornstarch, baking powder, and salt. Gradually add the cold beer or sparkling water to form a smooth batter.

    Prepare the Fish

    Dip each fish fillet into the batter, ensuring it’s well coated.

    Fry the Fish

    In the same hot oil, fry the battered fish fillets until they are golden brown and cooked through, about 4-5 minutes. Remove and drain on paper towels.

    Make the Coleslaw

    In a large bowl, combine shredded cabbage, shredded carrot, mayonnaise, lemon juice, salt, and pepper. Toss until well mixed.

    Make the Tartar Sauce

    In a bowl, mix together mayonnaise, finely chopped pickles, and lemon juice. Adjust seasoning with salt and pepper.

    Serve

    Serve the fish and chips hot with coleslaw and tartar sauce on the side.
