Make the Pie Crust
In a large bowl, mix the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the cold water, a tablespoon at a time, until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Filling
Peel and slice the Granny Smith apples. In a large bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until the apples are evenly coated.

Assemble the Pie
Preheat the oven to 425°F (220°C). Roll out one disc of dough on a floured surface to fit a 9-inch pie pan. Place the rolled dough in the pan and fill with the apple mixture. Roll out the second disc of dough and place it over the filling. Seal and flute the edges, and cut slits in the top crust for ventilation.

Bake
Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for 30-35 minutes, or until the apples are soft and the crust is golden brown. Let cool before serving.
