Prepare the Vegetables
Wash and chop all vegetables into bite-sized pieces.

In a small bowl, mix together soy sauce, sesame oil, minced garlic, minced ginger, cornstarch, and water to create the sauce.
Cooking

Heat the Pan
Heat a large skillet or wok over medium-high heat. Add a small amount of oil if desired.

Cook the Vegetables
Stir-fry the vegetables for about 5-7 minutes, or until they are tender-crisp.

Add Sauce and Finish Cooking
Pour the prepared sauce over the stir-fried vegetables and stir well to coat. Cook for an additional 2-3 minutes until the sauce thickens slightly.

Remove from heat and garnish with sesame seeds and sliced green onions if using.

Serve the vegetable stir-fry warm, either on its own or over rice or noodles.
