Marinating the Chicken

    Prepare the Marinade

    In a large bowl, whisk together the soy sauce, brown sugar, honey, minced garlic, grated ginger, black pepper, and sesame oil until fully combined.

    Marinate the Chicken

    Add the chicken thighs to the marinade, ensuring they are fully submerged. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or up to overnight for better flavor absorption.

Smoking the Chicken

    Prepare the Smoker

    Soak the applewood chips in water for at least 30 minutes prior to smoking. This will create a better smoke when heated.

    Preheat the Smoker

    Preheat your smoker to a temperature of 225°F (107°C).

    Add the Chicken

    Remove the chicken from the marinade and let any excess marinade drip off. Place the chicken thighs skin-side up on the smoker rack.

    Add the Applewood Chips

    Drain the soaked applewood chips and add them to the smoker box or directly on the coals of your smoker.

    Smoke the Chicken

    Smoke the chicken for about 2 to 2.5 hours, or until the internal temperature reaches 165°F (74°C).
