Calamari Preparation

    Prepare the Calamari

    Clean the calamari tubes by removing the insides and rinsing them under cold water. Slice them into rings about 1/2 inch thick.

    Soak in Buttermilk

    Place the calamari rings in a bowl and pour in the buttermilk. Ensure all the rings are submerged. Cover and refrigerate for at least 30 minutes.

    Prepare the Coating

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.

    Heat the Oil

    In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small bit of batter into it; if it sizzles and bubbles, it’s ready.

    Coat the Calamari

    Remove the calamari from the buttermilk, allowing excess to drip off. Dredge each ring in the flour mixture, ensuring they are evenly coated.

    Fry the Calamari

    Carefully place the coated calamari rings into the hot oil in batches. Fry for about 2-3 minutes or until they are golden brown. Use a slotted spoon to remove them and place them on a paper towel-lined plate to drain excess oil.

Spicy Aioli Preparation

    Mix the Ingredients

    In a small bowl, combine the mayonnaise, minced garlic, sriracha sauce, and lemon juice. Mix until smooth.

    Season the Aioli

    Taste the aioli and add salt to your preference. Mix again to combine.
