Preparing the Smoked Meats

    Season the Pork Shoulder

    In a small bowl, mix together salt, black pepper, paprika, garlic powder, and onion powder. Rub this mixture all over the pork shoulder, ensuring it is evenly coated. Let it sit at room temperature for at least 30 minutes.

    Prepare the Smoker

    Soak the applewood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C). Once the smoker is ready, drain the wood chips and place them in the smoker box.

    Smoke the Pork Shoulder

    Place the seasoned pork shoulder in the smoker and cover it. Smoke for about 6-8 hours, or until the internal temperature reaches 195°F (90°C).

Preparing the Classic Sides

    Make Mashed Potatoes

    Peel and chop the potatoes into chunks. Boil them in a large pot of salted water until fork-tender, about 15-20 minutes. Drain the potatoes and return them to the pot. Add butter and milk, then mash until creamy and smooth. Season with salt and pepper to taste.

    Sauté the Green Beans

    Trim the ends of the green beans. In a large skillet, heat olive oil over medium heat. Add the green beans and sauté for about 5-7 minutes, or until they are tender but still crisp. Drizzle with lemon juice and season with salt and pepper.
