Preparation

    Prepare the Brisket

    Trim excess fat from the brisket and cut it into 1-inch cubes.

    Make the Rub

    In a bowl, mix together brown sugar, paprika, black pepper, salt, garlic powder, onion powder, and cayenne pepper.

    Season the Brisket

    Rub the spice mixture all over the cubed brisket, ensuring each piece is well-coated. Let it sit for at least 30 minutes to absorb the flavors.

Smoking

    Preheat the Smoker

    Preheat your smoker to 225°F (107°C) using your choice of wood chips, preferably hickory or oak.

    Smoke the Brisket

    Place the cubed brisket into the smoker and smoke it for 3 hours.

Caramelization

    Prepare the BBQ Sauce

    In a bowl, mix together BBQ sauce, honey, and apple cider vinegar.

    Glaze the Brisket

    After 3 hours, remove the brisket from the smoker and place it in a large aluminum foil pan. Pour the BBQ sauce mixture over the brisket and toss to coat evenly.

    Finish Cooking

    Cover the pan with foil and return it to the smoker for an additional 2 hours.

    Caramelize the Burnt Ends

    After 2 hours, remove the foil and smoke for another 30 minutes to 1 hour, allowing the sauce to caramelize and create a sticky glaze.

Serving

    Remove the burnt ends from the smoker, let them rest for 10 minutes, and serve hot with extra BBQ sauce on the side.
