Method

Preparation of Base

  1. 1

    Mix Water and Sugar

In a large pot, combine 3 cups of water and 1 cup of sugar. Heat over medium heat until the sugar is completely dissolved.

  2. 2

Add Natural Flavors and Citric Acid

Once the sugar has dissolved, add 2 tablespoons of natural flavors and 1 teaspoon of citric acid to the mixture. Stir well to combine.

  3. 3

    Introduce Yeast

Remove the pot from heat and allow it to cool to room temperature. Once cooled, add 1 teaspoon of yeast. Stir gently to mix.

  4. 4

    Fermentation

Cover the pot with a clean cloth and let it sit at room temperature for 24-48 hours to allow fermentation. You should see bubbles forming.

Flavoring

  1. 5

    Add Black Cherry Ingredients

After fermentation, add 1 cup of black cherry juice and 1 teaspoon of black cherry extract to the mixture. Stir well to incorporate the flavors.

Carbonation

  1. 6

    Combine with Carbonated Water

In a clean container, combine the fermented mixture with 2 cups of carbonated water. Stir gently to mix without losing carbonation.

Bottling

  1. 7

    Bottle the Seltzer

Using a funnel, pour the seltzer into clean bottles. Seal tightly and refrigerate for at least 2 hours before serving.
