Preparation
Drain and Dry
Drain the potatoes in a colander and let them steam for several minutes to remove excess moisture. For best results, you can also spread them out on a baking sheet and let them cool completely.
Mixing and Shaping
Mash the Potatoes
In a large mixing bowl, use a potato masher or fork to mash the cooled potatoes until smooth.
Combine Ingredients
Add the all-purpose flour, cornstarch, salt, black pepper, onion powder, and garlic powder to the mashed potatoes. Mix until well combined.
Shape the Tots
Take a small amount of the potato mixture and shape it into a small cylinder or oval, about 1 inch long. Repeat until all the mixture is shaped into tots.
Cooking
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Tots
Carefully add the shaped tater tots to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes or until they are golden brown and crispy.
Drain and Serve
Using a slotted spoon, remove the tater tots from the oil and place them on a paper towel-lined plate to drain excess oil. Season with additional salt if desired and serve hot.
