Preparing the Sushi Rice

    Rinse the Rice

    In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a rice cooker, combine the rinsed sushi rice with 2 cups of water. Cook according to the manufacturer's instructions.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow to cool to room temperature.

Preparing the Fillings

    Using a sharp knife, slice the fresh salmon into thin strips.

    Cut the cucumber and avocado into thin strips, similar in size to the salmon slices.

Assembling the Sushi

    Using a sharp knife, slice the sushi roll into 6-8 pieces. Clean the knife with a damp cloth after each cut to ensure clean slices.
