Preparing Onion Rings

    Slice and Soak Onions

    Peel and slice the onions into thick rings, about 1/2 inch in thickness. Soak the onion rings in cold water for 30 minutes to reduce bitterness.

    Prepare Batter

    In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold water, stirring until the batter is smooth and thick.

    Heat Oil

    In a large deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry Onion Rings

    Remove the onion rings from the water and pat them dry with paper towels. Dip each onion ring into the batter, allowing excess to drip off. Carefully place them in the hot oil and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

    Cook Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove from heat and place on a paper towel to drain excess grease.

    Melt Cheddar Cheese

    Place the fried onion rings on a baking sheet, top with shredded cheddar cheese, and broil in the oven for 2-3 minutes until the cheese is melted.

    Prepare Croissant Buns

    Slice the croissant buns in half. You may toast them lightly if desired.

    Assemble the Burger

    On the bottom half of each croissant bun, place the cheesy onion rings, followed by two slices of crispy bacon. Drizzle BBQ sauce over the bacon and top with the other half of the croissant bun.
