Prepare the Grits

    In a medium saucepan, bring water and salt to a boil. Gradually stir in the grits. Reduce heat to low, cover, and cook for about 20-25 minutes, stirring occasionally until thickened. Stir in butter and goat cheese until melted and creamy.

Cook the Shrimp

    In a bowl, toss the shrimp with olive oil, garlic, salt, and black pepper. Preheat a grill or grill pan over medium-high heat. Grill the shrimp for about 2-3 minutes on each side until they are pink and cooked through.

Make the Herb Cream Sauce

    In a saucepan over medium heat, combine the heavy cream, lemon juice, and herbs. Bring to a simmer and cook for 5-7 minutes until slightly thickened. Stir in the crumbled bacon.
