Cooking Instructions

  1. 1

    Prepare the Ingredients

Begin by dicing the corned beef, red bell pepper, green bell pepper, onion, and slicing the mushrooms.

  2. 2

    Sauté Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onions, red bell pepper, green bell pepper, and mushrooms. Sauté until the vegetables have softened, about 5-7 minutes.

  3. 3

    Add Corned Beef

Add the diced corned beef to the skillet with the sautéed vegetables. Season with salt and black pepper. Stir well and cook for an additional 5 minutes until the corned beef is heated through and slightly crispy.

  4. 4

    Combine with Hashbrown Casserole

Add the hashbrown casserole to the skillet. Stir everything together until well combined and heated through, about 3-5 minutes.

  5. 5

    Fry the Eggs

In a separate pan, fry the eggs to your preference (sunny-side up, over-easy, etc.).

  6. 6

    Serve

Scoop the corned beef hash mixture onto plates and top each serving with a fried egg. Enjoy your West End Hash!
