Mexican Scramble Wrap Recipe

(Lunch Only) A perfect mix of chorizo, sauteed onions & jalapenos, cream cheese and scrambled eggs. Then we roll it up in a tortilla, grill it, and serve it with a side of Cajun sauce.

Filling Preparation

    Cook Chorizo

    In a skillet over medium heat, add the chorizo sausage. Cook for about 5-7 minutes, breaking it apart with a spatula, until browned and cooked through.

    Sauté Vegetables

    While the chorizo is cooking, finely chop the onion and jalapeño. Add them to the skillet with the cooked chorizo and sauté for an additional 3-4 minutes until the vegetables are softened.

    Scramble Eggs

    In a bowl, crack the eggs and whisk until well combined. Pour the eggs into the skillet with the chorizo and vegetables. Stir continuously until the eggs are fully cooked, about 3-4 minutes.

    Add Cream Cheese

    Once the eggs are cooked, reduce the heat to low and add the cream cheese to the mixture. Stir until the cream cheese is melted and evenly distributed throughout the filling.

Wrap Assembly and Grilling

    Assemble Wraps

    Lay a flour tortilla on a flat surface. Spoon a generous amount of the chorizo and egg mixture onto the center of the tortilla. Fold in the sides and roll up tightly to form a wrap.

    Grill the Wraps

    Preheat a grill or pan over medium heat. Place the wraps seam-side down on the grill. Cook for about 2-3 minutes on each side until the tortilla is golden brown and crispy.

    Mix Cajun Sauce

    In a small bowl, combine mayonnaise, hot sauce, paprika, garlic powder, salt, and black pepper. Stir until well mixed and set aside.
