Prepare the Ingredients
Dice the Andouille sausage into small pieces. Grate the Monterey Jack and Cheddar cheese. Soften the cream cheese by leaving it at room temperature for about 10 minutes.

Beat the Eggs
In a mixing bowl, crack the eggs and add salt and black pepper. Beat the eggs until the yolks and whites are fully combined.

Cook the Sausage
In a non-stick skillet, melt the butter over medium heat. Add the diced Andouille sausage and cook for about 3-4 minutes, stirring occasionally, until the sausage is browned and heated through.

Add the Cheeses
Sprinkle the grated Monterey Jack and Cheddar cheese over one half of the omelette. Add dollops of cream cheese on top of the grated cheese.

Fold and Finish Cooking
Once the eggs are mostly set, carefully fold the omelette in half over the cheese. Let it cook for an additional 1-2 minutes until the cheese melts and the omelette is cooked through.
