English Muffin and Ham

Poached Eggs

Hollandaise Sauce

Method

Preparing Hash Browns

  1. 1

    Step 1: Grate Potatoes

Peel and grate the potatoes into a bowl. Rinse with cold water and drain well.

  2. 2

    Step 2: Prepare Onion

Finely chop the onion and mix it with the grated potatoes.

  3. 3

    Step 3: Cook Hash Browns

Heat the vegetable oil in a skillet over medium heat. Add the potato and onion mixture, season with salt and pepper, and cook until golden brown, about 10-15 minutes.

Making Hollandaise Sauce

  1. 4

    Step 4: Melt Butter

In a saucepan, melt the butter over low heat until just melted.

  2. 5

    Step 5: Whisk Egg Yolks

In a bowl, whisk the egg yolks until pale. Gradually add melted butter while whisking continuously.

  3. 6

Step 6: Add Lemon and Seasoning

Stir in lemon juice, salt, and cayenne pepper. Keep the sauce warm, but do not let it boil.

Cooking Eggs and Assembling

  1. 7

    Step 7: Poach Eggs

Bring a pot of water to a simmer and add vinegar. Crack eggs into individual bowls and gently slide them into the simmering water. Poach for about 3-4 minutes until whites are set but yolks remain runny.

  2. 8

    Step 8: Toast Muffins

While the eggs are poaching, toast the English muffins until golden brown.

  3. 9

    Step 9: Assemble Weck's Benedict

On each muffin half, place a slice of ham, followed by a poached egg. Drizzle with hollandaise sauce and serve alongside crispy hash browns.
